What temp you take out a Beef Roast for Medium Rare???

Cooked one yesterday for my mom.

Started at 400 deg for 15 min. then dropped to 325 until temp probe
read 128 degrees. We put it in foil for 15-20 min. the temp climbed to
140ish...was perfect for 7 out of the 9 people but me and my cousin like it a bit rarer. It was a solid medium...or slightly above.

wondering what temp you pull em out for resting to get medium rare...
 
The chart I have calls for meat to be pulled at 125 for medium rare, with the cutting temp at 130 after resting. The reason yours climbed to 140 is probably that you cooked it at a higher temp. I smoke them at about 250, so the internal temp does not climb so high during the resting process. It sounds like you cooked yours in the oven, if so, try pulling it at about 117-120.

I usually pull at 120 and let it rest. I'd rather have to put it back on for a minute or 2 then to have over cooked meat.
