Last weekend I threw 10 pounds of yard bird on the drum.
A local supermarket had 10 pound bags of leg quarters at 29 cents a pound. So of course I grabbed up several bags.
I took one bag and cut the drums from the thighs and rubbed them down with my magic dust.
This the recipe:
1/2 cup firmly packed brown sugar
1/2 cup paprika
1/2 cup kosher salt
1/4 cup granulated garlic (or granulated garlic)
1/4 cup minced onion (or onion powder)
1 TBSP ground red pepper
1 TBSP black pepper
1 TBSP dry mustard
1 TBSP cumin
1 TBSP coriander.
Whisk it all together in a bowl and rub it on.
It's also good for pork.
Sometimes I leave out the sugar and/or the salt. This time I left them both out.
