I currently have a reverse flow smoker made out of a 125 gallon tank. I love it, and have had great smokes out of it, but I am ready to go bigger, as I am starting to need more space. I have a fabricator friend of mine that is going to do the build, but I am not sure what I want, or what would be best. Whatever we build, it will be insulated. I was thinking possibly a vertical, and his thoughts were to put the racks on a mast that would spin like a rotisserie hopefully getting an even cook and keeping the smoke moving. I would also like to eventually do a whole hog. Any thoughts or ideas or pictures would be appreciated. Thanks!
