Brunswick stew, that's what!
I had some leftover pulled pork and brisket point in the freezer that I have been meaning to put into a pot of Brunswick stew, and decided today was the day.
I really wasn't up to chopping all of those veggies, so a quick look through the freezer at Publix and I found a gumbo mix that had everything I wanted, so two bags would work.
While everything sauteed, I chopped up the brisket and pork to a finer state, added it to the pot with bbq sauce, fire roasted diced tomatoes, sliced potatoes, salt, pepper, etc., and let it simmer for a while.
It really turned out good. I like a little extra black pepper, so I added it to my bowl with some saltines. Suddenly, the day didn't seem so cold and dismal.
