Did you have any kind of diffuser or water pan in the drum? Did you ice the breasts down at all?
 
Usually, yes.

I went on a long hunt for a "natural" or NON enhanced bird last year or the year before and found how hard it was to find one that is NOT previously "enhanced" with a solution.

Both of the turkeys I did this year were just your standard variety "enhanced with up to 8% solution" birds. I still brine em with good results.

I know where you could have got a fresh bird... non injected... I cooked damn near 30 of them...:laugh:

I picked up a 18# bird last night that I plan on smoking on Sunday. I keep debating trying the pitbarrel cooker hung, or my UDS spactcocked, or doing like you did. ... hard to decide.
 
Those are a couple of great looking birds. I haven't been an injector but I think I'm putting one on my Christmas list.
