Hey everyone, I have a Lone Star Grillz 20x36 offset and I have been very pleased with the results I get with that pit; however, I was contemplating on getting a larger traditional offset that also has a warming directly over the firebox rather than on the smoke stack side. I have seen several pits with this setup in a reverse flow configuration like the ones at TMGPits, but I like the traditional flow as I don’t want to impede the convection of my cook when using it normally.

My hopes are that I can get the best of both worlds with a traditional offset and a pit barre cooker with this configuration. My concerns are with the traditional offset layout if I was to use the warming oven as a direct smoker for say ribs while having brisket or pork shoulder in the main chamber would this produce poor results?

What are y’all’s thoughts?

You can set it up into so many configurations. I have a LSG 24x30 vertical offset with the oven. The options are endless with the oven

The plate is removable for full access to vertical cooking

Or slide it back for smoking

I control the temps with the pinwheels on the oven

I got mine in late 2014 and I know shortly after they also put pinwheels on the separator/diffuser plate for even more control
