** A lot of other good eats goin' down the road in Baja. Highly recommend the ceviche tostadas. Don't get me started on tamales, food of the Americas south of the 30th parallel.

You will learn a lot from the Taco Chronicles, it's very well done. Saying tacos must be made with corn tortillas is like saying true BBQ is Texas brisket. Every region has there own version of a type of food and it usually made with what's locally available.
