Was not planning to use the offset today due to weather. However, the skies parted a bit, switched smokers, and went for it.

Cooked two racks of spares, a 9 lbs flat, and a chicken to munch on. And, as an afterthought, threw on a piece of corned beef late.

Ribs are good, flat is resting, and corned beef still on the smoker.

Yes! The two soft drink flats served that purpose today. I've contemplated reworking the base of my smoker in order to lower it. But, the boxes are very convenient.

Further, I was telling Mrs. G-man that I need to add a counter weight to the lid, since I'm soon moving into old age.

The brisket turned out around 8 of 10. One of my better flats, as I normally cook a full packer. I didn't wrap, but mopped 3 hours in. It was fine this evening, but may need a little sauce on leftovers. Will probably wrap next time around 170. I was also surprised how long it stalled. I cooked at 225-250.

Gets me up to perfect height and was quite affordable.

Walmart has them. But you can often find them for free if you go dumpster diving after the kids move into the local college dorms.
