As far as what would I do differently? I don't know. I'd probably not freak out so much, I'd find a better way to catch some of the fat that ran down into the smoke chamber, and better check the shoulders individually. The last one had a portion that was not quite ready for pulling. It worked, but it was not as easy as the rest.
We sampled some and it was outstanding. The big test comes this afternoon when all of us come together to celebrate the Holiday.
