I'll be using my UDS for thanksgiving so we decided to try a chicken as a trial run. I've done many pork butts and other low and slow things in the UDS, but never anything that needed more heat. It turned out great. Very tender and juicy. The potatoes had a chicken flavor to them. Weird, but they were good. We put apple juice in the beer can place and rubbed the chicken with Yard Bird.
