Swine and Surf

It was a beautiful 80 degree day yesterday. My next door neighbor made biscuits and gravy for our breakfast (yum!), so we reciprocated and cooked dinner.

I grilled a pile of shrimp for starters.

I also grilled some pork loin chops. We served them with sauteed spinach and rice. It was a great dinner. :-D

I have to up my loin chop game. We got some thick loin chops from Costco last week and I keep over cooking them, afraid that they are going to be underdone. Even my digital thermometer has been lying to me for whatever reason. :x
