It’s been a coon’s age since I’ve rolled a fattie, so when the wife asked for some ABTs I figured no reason to fire up the bandera just for those, so I gathered the ingredients and set about to see how rusty I was at rolling a good fattie.

Mild Italian sausage, sprinkled with Mad Hunky general purpose rub, a layer of prosciutto, a bit of mozzarella, diced olives, sautéed bell peppers and onions, then more mozzarella and olives and finally a dollop of pizza sauce.

Turns out rolling a fattie is kinda like falling off a bicycle, you never really forget how. I rolled it up nice and tight and set her in the fridge to rest overnight.

Next day I fired up the ole bandera to around 225 and put in the ABTs and the fattie.

Let er ride to 165 IT then let her rest a while before slicing

Thanks everyone! Hopefully now that my schedule has cleared up some I can get back to smoking more regularly. :thumb:
