Halved the loin I bought at SAM's today. Roughly butterflied, inside coated with EV olive oil, fresh rosemary, S&P, dried thyme, layered with Pancetta, Asiago cheese, and Sun dried tomatoes.

I then rolled it up, tied butchers twine around it ( I need more experience with this ) coated outside with EVOO S&P and thyme. Smoked with apple and cherry over Royal Oak lump.

Finished product in a few.

How big was your loin? How long and at what temp did you cook it.

Its a season salt I made last week. It goes great on corn and I'm trying to perfect it. Just a name I came up with on a random, but I like it.

I can see it now in a Local Grocer near you. Almost Infamous - Corn Salt.
