Started out by marinating some wings in Peri Peri and Heavenly Habanero yesterday

First thing on today was ham from the freezer with Simply Marvelous Season All for the rub. Ham is done.

Is there a reason for butchering the ends of the wing flats like that? Could it be by removing the knuckle you can then just suck the meat off the bones?
