Those look good! I have tried a couple cuts of bison on the smoker -but never short ribs.

The bison brisket i did turned out a tad dry.

Smoked a bison chuck roast a few years back and made Mississippi smoked pot roast - was very flavorful

I was at a comp many moons ago that had an ancillary category for Bison brisket. I thought I nailed it and turned in a box like a regular brisket entry. I got beat by Bison tacos. Guh.

When it comes to these critters... I've found myself at a crossroads on several occasions. :laugh: I live in bison country and eat a lot of ground meat (burgers, meatballs and meatloaf. My other favorites are tenderloin and back ribs. Steaks can be hit and miss, but just over rare is the way to go. I've never cooked short ribs, and have eaten brisket a few times, just never cooked it.
