Wanted to give this Adam Perry Lang beef short rib recipe a try from his Serious BBQ book (thanks again gtr, Greg :)).

Slathered the ribs in a mustard based sauce...

applied the dry rub concoction...

sprayed with a bit of oil and onto the old horizontal wood burner with some hickory...

After 5 hours of smoke they were foiled with a brown sugar, honey, beef bouillon mixture.

Then unwrapped and back on the smoker....
This is where things started getting strange.

Two rib bones went east and the other two pointed west. :shocked:

I've not had ribs do this before. They were pretty strange looking. lol


didn't get a great shot of the cut ribs... was tooo hungry!

The finishing sauce reminded me of parsley salad that I use on marrow bones... http://www.bbq-brethren.com/forum/showthread.php?t=133803 so I went that route.
Toasted some bread and topped it with the rib meat and parsley sauce..

The ribs were tasty! I will make these again for sure. :thumb:
Asked my butcher about the east/west bone protrusion ....he blamed it on new help. :tsk: :grin:

Great looking short ribs there, and I'm trying to come up with a witty comment about how the bones are going both directions, but I'm coming up empty... :sleep:

Great lookin' cook, Jeanie. Never seen ribs do that before, but who cares about that anyway, as long as it tastes good!
 
Never thought brown sugar and honey works well with beef. Did it make it taste candied? I gotta try it I guess, I'm skeptical though.
