I've done all of these with a turkey, but I have NOT done dry brine! Wife is very skeptical about me doing anything other than wet brining. My wet brine recipe I've perfected and that is what she wants!!
So my question is this, for those of you who have done dry brining, how much of a difference is the between the two? Aside from wet and dry!
