Smoked tomato raisins and chicken salad...

Pellet cooked chicken salads for lunch. Always so stinkin’ tasty and healthy! Started by making a batch of “tomato raisins”, which is simply smoked cherry tomatoes. Poke each tomato with a fork so juices release during cooking - place on a wire cooling rack or frogmat - cook tomatoes @ 210-225° for 6 hours. Remove and cool. Really good stuff!! Add to that a mess of pellet cooked chicken along with a few other goodies and you end up with a really tasty salad [emoji846]

Ummmmm. More on the tomoates! Is tha like sun dried ? Do they get sweet?



I have a hunch that longer smoke would take them to a more “sundried” state. 6 hours at 215-225° leaves them sweet/soft and yummy. We love em! I prefer to let them cool before eating... more often than not in the fridge for a bit.

Looks great to me!

Now that the weather is cooling, I always find my thoughts turning to using my smoker.

Smoked Cherry Tomatoes sound really good.
But my method will likely vary.
Cold smoked, then dehydrated.
I'm a deviant. :wacko:
