Skirt steak with grilled romaine and endive

Most folks wouldn't consider romaine or other lettuce on the grill, but it takes dinner salad to another level. These are the starting ingredients. Skirt steak, romaine, endive, red onion, tomato, and shave parmesian.

First, tossed the skirt steak in olive oil, S&P, and garlic, then on the fire for a sear.

Took the steak off, and put the romaine and endive halves on to char. They were drizzled with xv olive oil, salt, pepper and garlic

Took everything off, and assembled the salad. Lettuce and endive topped with the skirt steak, red onion, tomato, and parmesian

Put the deflector plate in and returned the assembled salad to melt the cheese and slightly wilt the lettuce further.

The plated meal, with a side of fresh baked multi grain with a dip combination of portobello garlic oil and black walnut balsamic. Added a bit of Caesar vinaigrette to the salad. Turned into a great meal. Thanks for looking!

Those are some awesome looking plates Mike! I just got hooked on skirt steaks in the last year, they are soooo tasty! I gotta try the grilling the romaine thing, thanks for the inspiration. :thumb:
