I've made these in the past. Last time I used conecuh sausage, went with Opa's this time because it was handy.

Brought some gulf shrimp back from a trip south.

Seasoned with Brethren Wicked Cajun's Pookie G DaYum rub...

gave the shrimp a quick cook...

then sauteed some cubed Opa's Jalapeno sausage in butter...

onions, scallions and garlic...

thickened the sauce with flour...

added cream and more Pookie G DaYum.

When the sauce was thickened, I added a bit of cheese, the shrimp, sausage and some parsley...

Blistered, steamed, peeled and seeded the poblanos..

These were creamy, smokey, gooey and comforting. :)
They are becoming one of my favorites.

Thank you Thingfish! These things are becoming one of my favorite comfort foods. They take on the smoke really well too. :-D
 
My mouth is watering. I've been looking for a different stuffed pepper recipe and you nailed this one.

Thank you! The creamy sauce takes on the smoke well. Also, they have a slight kick with the jalapeno sausage and Pookie G rub. The variations are endless. :-D
 
Seriously great looking results there. I have been here, there and everywhere today, no time for a real lunch, and those pics reminded me of that. Now I have to go fill that void. Great cook as always, Jeanie.
