So I had a couple of racks of short ribs I was going to cook tomorrow. I decided to cook them today figuring I'd have enough left over for tomorrow. Mrs. campdude doesn't usually eat beef ribs. When I took them out bandera, she said "Fark, they smell really good"! Well, not in those exact words, but you get the idea. So now I only have two bones left for tomorrow. Oh well, she doesn't eat a lot of BBQ, so it's good to see her enjoy it once in a while.
For the cook, I trimmed them up, then one rack got Ployboys Bovine Bold, and the other just got grey salt and garlic powder. Into the smoker at 290* for about 2 1/2 hours over KB with hickory and cherry. Then I put them on a rack in a foil pan with beef stock in the bottom and covered with foil. About an hour later I pulled them out and tossed them over the coals for 3 or 4 mins. Sorry no plate shot, but did get a shot of dessert. Dark chocolate brownie with German chocolate icing on top.
