I've been making and eating scotch eggs for years but have never seen anything like this fatty before. Awesome! One question, why the cheese?
 
I've got 2 dozen eggs and 4 lbs of sausage in the fridge right now waiting for me to put them together for tomorrows family brunch. Your way, I can add BACON! and CHEESE!! :clap2: Brilliant!!
