I've never been a big fan of lamb but the misses is. I think I've found something we both agree on that's better with lamb than it's with beef: barbacoa. When a supermarket was doing an Easter special for leg of lamb, I made sure to go in early and grab 2. I swear, it's the only thing I've hoarded in these times
Lamb looked good, I decided on a little twist this time so I rubbed it with SP and garlic powder a day early and wrapped it in plastic foil. Took it out of the foil the next morning and let it dry in the fridge for a few hours. Fired up the stickburner and ran a smooth cook. Rub had set after 3 hours, so it went into its barbacoa bath until tender. Pulled the lamb and mixed with the contents of the pan and back on the smoker for another hour. Served on homemade corn tortillas with some hot sauce and pickled red onions.
I can't imagine this dish ever getting any better than this, it was a homerun.
