Just like the title says. It'll be used for the occasional brisket, tri tip, roast and at times slicing full slabs of homemade bacon.

Will 12" be enough or would you recommend a 14"??

^ +1.... I bought one of these Mercer Knives for my helper a few years ago because I didn't want him using my Wusthof knives. I was at an event without my knife set and I had to use this. I was surprised at how well it had handled and the balance. This is a great low cost alternative that holds an edge and gets the job done.
 
I have a Montana 7306G and the Dexter S140-12SC Both are 12" and both do a great job.

Franklin recommends the Montana for what it's worth.
