Pork Belly Burnt Ends

I have made Malcolm's burnt ends several times, the don't last long. Separate the batch and freeze some, you will be glad later. Spread out the cholesterol.
 
That was the first time I copied an internet BBQers recipe. I'm glad I did and I'm happy that my local CostCo now has the pork belly.
/sadly while the pork belly is every day the whole brisket is a dice roll
