I do need to make a correction my reference to "onion jam" is incorrect as Stephanie pointed out to me it is actually "shallot relish" whatever you want to call it, it is delicious.

I swear in one of the pics the flames actually look like lips giving a kiss. Definitely a contender in the flame kissed throwdown, hope you entered.

Looks Fab! I can't find anyone around LA who has a sirloin cap cut. I do come your way occasionally— can you divulge where you find them?
