What was your method for cooking the pork belly? I have 10 lbs of it in the freezer and would like to do something different besides bacon.

Nothing special really,I just covered them in olive oil,rubbed them with Dizzy Dust,smoked them indirect for a short time and then I grilled them till most of the fat is burnt off.
It should be a bit crispy because of the grilled fat.
