Haven't posted in forever. Hope everyone had great Christmas! 40F outside with sunshine and I decided to smoke cheese. Mostly NY Sharp Cheddar because that was my favorite from last time. Also a little muenster and pepper jack. Using Pitmaster blend of cherry/hickory/maple in my dust tray. I have a tube, but keep misplacing it. This works fine, just have to relight sometimes. I both buy and make dust from pellets by soaking, smashing, drying and I microwave a minute before using to dry more. smoker temp 64F right now. Have an awesome holiday.
