I've used a WSM for years and more recently a couple of pellet cookers and my PK360. Finally decided to take the plunge on an offset. After doing some research I'm going to go with a pit built by Bell Fabrication. Seems like a lot of smoker for the money. Curious if there are any must have options I should have included? Going to go with an insulated firebox and a couple of ports for temp probes beyond that not sure if there is anything else I should make sure to include beyond his standard build?
 
I'm not familiar with a Bell pit or the options they offer if it's a larger pit slide out racks are nice. I recently finished a 500 gallon offset and built slide out racks on it really glad I did.
