I catered a party friday night and part of the menu was a packer brisket and 4 flats. I tried a new rub and method and low and behold I turned out the best brisket I've ever done. I have a flat going right now trying to duplicate the taste. If i'm consistant I may have just upped my comp score. Very much looking forward to tonight's results.
 
very interested to see if it has more to do with the different rub i used or the different method.

I normally run a small bag of kingsford plus a stick of hickory to get the pit warm and up to temp. Once I'm burning 100% hot coals its nothing but wood from there on out.

Last cook I cooked with 50% kingsford, 50% hickory. I am doing the same this time. I have to add fuel every hour, swaping between the two.

I'll have to run it one more time with just the rub and cooking with 100% wood. We shall see.
