Hi everyone! I did my first brisket in over a year, and while I was waiting for people to come over for dinner I made myself a rib sandwich for lunch, it was great! I did scratch made baked beans, mac n cheese, and jalapeno cheddar biscuits and I threw some sausage on the smoker too!

The brisket came out as good as it could have I think. It was probably my easiest slicing brisket I've done, it didn't crumble and it wasn't really dry at all. The flat could have used a little more moisture but I think it was the meat's fault, I got a walmart one that was a little on the small side. The point was perfect though! I'm a little bummed there weren't many slices that included both parts of the meat, those are my favorite ones, oh well. The flavor was great, it had enough smoke flavor on it and no pot roast taste, and the smoke ring was gorgeous! I made a chipotle coffee bbq sauce for the brisket. I used a WSM with lump charcoal and hickory chunks with a little bit of apple wood thrown in too. Happy New Year everyone!
