So the girlfriend surprised me with an early Christmas present a couple days ago. A new Traeger! Did burgers on it last night after the initial burn in but HAD to do a customary fatty today! Turned out great. I have a feeling ill be using this thing a lot!

Rubbed down with some Dominator Sweet Rib Rub from Oakridge.
On to the Traeger on the smoke setting for an hour then bumped to 250. Fireboard on to monitor smoker and fatty temp.
Pulled at 165
And sliced.
And here's the log from the fireboard. Knew the temp swings were coming, just wanted to see how far they went. Probably not going to have much affect on the outcome.
