Wow. Just wow. I will 100% be ripping this off. That's inspirational!
 
You can grill whole heads of romaine and then top with favorite salad fixings and dressing for a grilled summer salad. I like doing this then adding shaved Parmesan, homemade Cesar dressing, and serving it with grilled bread instead of croutons.

Chicken Quesadillas grill up really well, just fill with cheese and top with a eggplant if you're feeling fancy.
Babaghaboush is another good one, wrap an eggplant in foil and let it sit on bbq until super tender, then mash with garlic, tahini, lemon and salt!
