I'm almost done refinishing a NB BD I picked up on craigslist, and I'm at the part where I am researching Thermometers.

Based on the posts in this forum, I'm looking at Tel-Tru and Ashcroft ( so far I like the customization options offered by Ashcroft)

I haven't been able to find any sources that say what size stem I should use. I plan on mounting the thermometer at meat level, should I get a 4" stem to get the most accurate reading?
 
If you are mounting it on the door at grate level, it needs to be at least 2.5" or it will get inconsistent readings. 4" will be fine as long as you are careful with your meat and don't let anything touch it.
