Some friends ours came up for my daughters wedding. They had one request- a Mexican fatty.
Ground chicken, chorizo, pablano peppers, onion, wrapped in a bacon weave.

That looks awesome!

I picked up some hot Italian sausage today, hot sopressata (salami). I have provolone and mozzarella at home. Not sure which way I am going to go there. Going to smoke on my UDS tomorrow if the snow holds off.

Yours looks absolutely killer!
 
Interesting. A little unsure of the ground chicken myself but, it looks and sounds delicious. I might give that a little try with some Tomatillos to go with the chicken.

If I get close to that color and bacon weave, I'll be super happy! You sir, set a high standard for an amateur like me!
