I'm catering a PTA luncheon for 400 teachers and am looking for help with amounts of food. The menu is pulled pork chili (and some vegetarian chili for the non meat eaters), pulled chicken, coleslaw, and potato salad. Here's what I'm thinking...

Pulled Pork Chili - 400 cups = 25 gallons (make 30 to be safe)

350 pieces cornbread

Pulled Chicken - 100 lbs (4 oz sandwich for each)

350 buns

Coleslaw - 3 oz per person ?? Start with 50lbs shredded slaw and mix in dressing?

Potato Salad - 4 oz per person ?? Start with 80lbs taters and add egg/celery/etc. ?

What do you think? Thanks in advance for your help!
 
I think your numbers look good, if I were to change anything I'd maybe figure 4oz of slaw pp but with the chili I think you are fine.
