So as the title says I got a basic meat grinder and sausage stuffer to try out the art of sausage making. Making my own bacon convinced me that making my own was the way to go. Anyway, I want to make beef jalapeno sausage like I had in Texas. If anyone has any recipes or advice I would greatly appreciate them. :becky:

I also have half of bambi in my freezer waiting to be ground up. Any deer sausage recipes would also be appreciated.
 
Cheddar Jalapeno Sausages

INGREDIENTS

4.5 pounds pork butt
1.5 pounds pork fat
38 mm hog casings
4 cups high temperature cheddar cheese
5 medium jalapenos, minced, and lightly sautéed
7 cloves garlic, finely minced or pressed
2 tablespoons kosher salt
4 teaspoons black pepper
2 teaspoons onion powder
2 teaspoons red pepper flakes
2 tablespoons mustard seeds
1 rounded teaspoon Instacure #1
1 cup ice water


DIRECTIONS


  • Grind meat and fat together through the 4.5 mm plate. Make sure both are very cold or semi-frozen.
  • Combine meat, cheese, jalapenos, spices, cure, and ice water in your meat mixer and mix well.
  • Stuff into 38 mm casings. Tie off in 1 foot lengths.
  • Smoke at 165-170F until the sausage reaches an internal temperature of 150F.
  • Plunge into ice water until cool.
  • Hang for an hour to bloom.
