Two of the products that my company in Florida makes are smoked fish spreads (both tuna and salmon). We are having problems with both of the smokers that we use. They are both in Miami, one is MacKnight, who does our salmon, and they are maxed out on production and the other is going out of business any day now and will go unnamed, but has been doing our tuna. I was thinking that someone here might have an idea of some other options.
