Mondays are usually leftover night at our house. So having a decent amount of brisket left from Sunday diner and having read the post about leftover brisket options, I decided to forgo my usual tacos in favor of BRISKET CHILI :razz:
My kids were intrigued.
This is what I came up with...
Started with a little less than 2 pounds of brisket
Chopped some onion, green pepper, and garlic. Found a couple Anaheim peppers I forgot about. Roasted them and in the pot they went.After all that cooked down in went the: spices,tomatoes,paste,beans, 1C.broth,1C.coffee.
Brought all this to a simmer and let it go 2 hours.Turned out great.
This was my first but definitely not my last leftover brisket chili!
