Lang 36 Break’n Her In!

36 owner here as well. While i think the cooker is a quality build, for some of the reasons you have encountered, i would never recommend a 36 to someone and would recommend going for the 48.. The area near the firebox will be hotter and quite a bit more. It is better using a small fire, but the difference is still there. Cooking one meat, its not that big a deal, but all of the cooking space is not legit cooking space for me since meat burns near the firebox.

Also, you absolutely need to cut your splits in half or you will need to almost choke the fire to keep lower temps.. With the size of the cooker, it wants to cook in the 275 to 325 range. When i run my lang now, i have almost no coal bed and the vents wide open with very small splits.

Not dinging lang. At some point, i will probably buy a 48 or a 60... just 36 takes some practice to learn what it cant do.
