Well I can’t say anything about brisket; but, I use to do my top sirloins on a gas grill as low as it would go (maybe 325) and since I’ve been doing them on the BBQ (about 225) they have been much more tender and juicy. In fact they have been so good I’ve talked the Mrs. Into letting me buy a new BBQ
