1.5 cups kidney beans soaked over night with a Tbs of baking soda
1lb (plus) Andouille sausge you made and smoked
1/2 lb diced thick bacon 1/8th inch cubes - you made and smoked
Medium onion diced
Bell pepper (I left out)
4 cloves garlic minced
1/2 tsp cumin
1 Tbs hot sauce
1/2 tsp salt
black pepper to taste

cook bacon and Andouille until they have color

add eveything and stir

35 min high pressure
Ok so does not look good

saute mode for half hour... this makes the starch from the beans and the fat to make gravy

This does work! I used basmatti rice for the flavor!

This is better than dutch oven....

So thick and creamy. I'm ashamed to say, the only red beans and rice I've ever had is from Popeye's chicken, and I loved it. I can only imagine this version is 5x better, so I will be trying it soon.
 
Mike: I added water to cover (2 1/2 cups) may go 2 cups next time or use more dried beans

Chili: yes I rinsed beans after soaking then let drain as you see in first pic

Will see how it turns out. I made some changes, based on my flavor preferences, nothing major.
