Some of you might have seen my hog pit I acquired to cook the whole hog for by birthday bash in November.

I have done a couple of test burns, but this is the first actually cooking I’ve done on it.

Dry brined a 4lb skin-on belly with harvest brine and let sit for 48 hours.

Today I got the hog pit fired up and the belly is on.

Pork belly looks amazing! Did the skin get chopped up with the rest of the belly? I didn't see earlier posts on your pit, do you have a grate toward the bottom? Do you start with lump or briquettes and add wood sticks?

Yes, skin was chopped with the belly.
There’s only a top grate, bottom is the ground. Briquettes and wood
