Real quick, when you guys do a HnF brisket cook (300* grate temp) where do you probe?

Is it in the flat or point?
Do you probe from the side or from the top?
Also with the HnF shud the probe still be going in like "budda"

Regarding the rest... I plan on using BP. Should I leave it in the paper while resting?

Yes probe should have 0 resistance
I rest in the paper on my counter and allow the Internal temp to drop into the 150s About 2 hrs
