It's Good Friday... I suppose today would be the appropriate time to announce that Bigmista's signature dish at the restaurant will be a pulled rabbit sammich with chocolate bbq sauce topped with a yellow peep

But how do I keep the chocolate from melting in the smoker?

:tsk: You have been here for how many years, and you don't know about cold smoking yet? Chocolate melts between 86 - 90°, and cold smoking is usually done between 70 - 85°
