Gunfire Squid, so named because the light batter cracks when you bite it, is my favourite dish. Tender fresh squid coated in batter and topped with minced scallion and chill peppers and dusted with special seasoning.
It's taken me forever tweaking this to get it to where I want it.

The sides are an Asian dressed slaw and cucumber and red onion salad.

Next, a local species of snapper filleted and painted with a delicate mix of mirin, soy sauce and sake, then air dried.
Grilled gently over charcoal on the WGA.

Grilled seasoned rice cakes, Japanese egg roll, pickled diakon and nori
