GrillGrates cheeseburgers

Any benefits to using the grillgrates like that, versus using the Blackstone, or just a matter of 'these are the tools I want to play with today?

That's some of it to a degree - the holes in the grate do allow the juices to drain off vs accumulating under the patty or steam it (which I get around on the griddle by just moving burgers to different locations). Those juices also drip down onto the coals or flame, which obviously gives you the traditional grilling flavor. And not that I'm really sure there's much of a practical purpose for it, but I can get them a good bit hotter than the Blackstone griddle top. I would say the crust I got on these burgers is probably the best from any grill/device I've used.
