55 F and sunny! What a beautiful Sunday. I had some Creekstone Farms USDA Prime beef short ribs marinating in the fridge since Wednesday so it was time to cook. I took 2 whole 4 piece beef short ribs and cut it into English style pieces with my hacksaw. Then I ribboned out and scored the meat before marinating it Korean galbi sauce.

Today was perfect winter day to grill.

Ate the short ribs with spicy naengmyeon. Spicy buckwheat noodles pairs perfect with the beef short ribs. Noodles are super chewy. If you had Japanese soba noodles, it's similar in texture. Gojuchang based sauce adds heat and while vinegar adds sour taste. The heat and sour from the naengmyeon noodles cut through the fatty rich beefy taste of the grilled short ribs and counterbalances the sweet, salty, savory taste of the ribs. It's like the perfect combination of taste/flavor and texture. It's hard to describe. You just have to taste it together. Even after you stuff yourself, you'll feel so clean!
