Got Wood.
I've been wanting to try Ray Sheehan's new book, so I Dove into the deep (freezer) and came out with a nice Rack of Pork.
FYI here is the link to the book. After one recipe in I am sold, sold, sold. Great book.
I tried the Reverse seared center cut rack of pork recipe. It called for a pork brine, a house rub, and peach BBQ sauce. I had to substitute apricot for peach in the sauce, but it worked!
Here it is out of the cooker after smoke, sear, glaze and set:
Made some cornbread muffins to go with:
Plated with some skillet potatoes and grilled asparagus:
