I had a lot of smoked chicken left over from the weekend, so I made quesadillas for dinner. I found a rub recipe in one of Ray Lampe's cookbooks called FrankenChicken. I make it all the time now, and I had used the rub on the smoked chicken I made over the weekend.

Ingredients: smoked chicken, sweet bell pepper, Jalapeños, sweet onion, butter, Kraft Mexican four cheese mix, flour tortillas.

I cooked the onions & peppers in olive oil and butter with a few more shakes of FrankenChicken rub.

Flipping it over without loosing all the goody is easier said than done, :heh: , and since my wife's out of town this is now considered a serving suggestion...
